Fried Rice 3 cups cooked white rice (cold) 4 ounce of ground pork (or your choice of protein) 1/2 tsp. salt (separate 1/4 tsp) 1/8 tsp black pepper 2 tsp mushroom dark soy sauce or dark soy sauce 2 Tbs oyster sauce 2 Tbs light soy sauce 1 Tbs fish sauce 1 tsp sesame oil 1 Tbs vegetable oil 2 eggs 1/3 cup frozen mix vegetables 2 cloves of garlic, minced 1 tsp ginger, minced 1 small onion, chopped 2 green onions, chopped Cooking spray oil Servings: 2 Prep: 30 minutes Cook: 30 minutes Instructions: Combine dark soy sauce, oyster sauce, soy sauce and sesame oil in a bowl and set aside. Mince garlic and ginger and set aside. Chop small onion and green onions and set aside. Place frozen vegetable in a bowl and set aside. Heat wok or pan on medium high with cooking spray oil and crack two eggs and scramble. Cook until fully cook and remove from wok/pan and set aside. In the same wok/pan, spray cooking oil into wok/pan and cook ground pork or protein of choice and season with (1/4 tsp) salt and pepper. Break up the ground pork and as you mix. Cook until fully cooked. Remove from wok/pan and set side. Use vegetable oil in the same wok/pan to cook your aromatics; garlic, ginger. Add chopped onion and mix until translucent. Add frozen vegetables and mix all vegetables and aromatics. Push to one side of wok/pan. Add cold white rice and break it up with a spoon or spatula. I switch between the two. The heat from the wok/pan will help break up the cold lumpy rice. Add remaining 1/4 tsp salt. Add cooked ground pork and mix. Add in sauce and mix. Turn off heat and add in scramble eggs and mix. Add in chopped green onions and serve.
