Lemon Pound Cake Recipe: 1/2 cup unsalted, softened butter 1 cup sugar 2 large eggs at room temperature 2-3TBS lemon juice Zest of 1-2 lemons 1 1/2 cup flour 1 tsp baking powder 1/4 tsp salt 1/2 cup buttermilk Lemon Glaze: 1 cup confectioner sugar 2 TBS lemon juice lemon zest is optional 1 TBS water Lemon Simple Sugar: 1/3 cup sugar 2 TBS lemon juice lemon zest optional 3 TBS water 1) Cream butter, sugar and eggs 2) Mix dry ingredients: flour, baking powder and salt 3) Add 1/3 of mixed dry ingredients into butter, sugar and egg mixture, mix, add 1/4 cup buttermilk, mix, add 2/3 of dry ingredients, mix, add last 1/4 cup buttermilk, mix, add last 1/3 of dry ingredients, mix for 15 seconds 4) Turn off stand mixer, add in lemon juice and zest and mix by hand until fully combined. Do not over mix. 5) Bake lemon cake at 325 degrees for 40-50 minutes 6) Make lemon glaze 7) Make lemon simple sugar 8) Let lemon pound cake cool for 10 minutes before poking holes with a skewer and pour over lemon simple sugar. Let it cool for another 15 minutes. 9) Invert lemon pound cake to a server platter and pour over lemon glaze. Enjoy!
