Chocolate Cupcake Recipe: Dry Ingredients: 1 cup flour 3/4 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt 1 cup sugar 1/2 cup unsweetened cocoa powder or dutch processed Wet Ingredients: 1 cup buttermilk 1 egg, room temperature 1/4 cup vegetable oil 1/2 cup coffee or hot water 2 tsp vanilla extract Instructions: Sift flour, cocoa, baking soda, baking powder, salt and sugar in a bowl and set aside. In a separate bowl, mix your egg, vegetable oil, and vanilla extract into your buttermilk. Mix the wet ingredients a into the dry ingredients. Last mix in the coffee. Be careful not to over mix. Bake for 15-16 minutes depending on oven at 350 degrees. This will make 12-14 cupcakes. Make sure your cupcakes are completely cool before you frost. Buttercream Frosting: 1/2 stick of unsalted butter, room temperature 2 cups confectioner sugar 1/4 cup milk (use one TBS at a time, you might not need all of it) 1 tsp vanilla extract Mix for 6-10 minutes.
