Indian Inspired Potato Recipe Ingredients: 5-6 potato (peeled and boiled) 1 medium onion (chop) 2 tsp fresh ginger (minced) 1 tsp garlic (minced) 1 cup green peas (frozen) 1/4 cup fresh cilantro or coriander (chopped) 1/2 small lime 2 TBS oil 2 tsp cumin seeds 2 tsp coriander seeds 2 tsp garam masala 1 tsp turmeric 1/2 tsp cumin 1/2 hot curry 1/2 tsp chili powder 1/2 garlic salt 2 tsp salt (to your liking) 1 tsp black pepper (can omit) 1 package on wonton wrappers 1 egg vegetable oil for frying Instructions: Peel and boil potatoes until tender. Drain and mash the potato. Chop onions, mince, ginger, garlic, cilantro or coriander leaves. Heat up a large pan and add oil. Add cumin and coriander seeds into the hot oil to release the flavors. Add the garam masala, turmeric, cumin powder, hot curry, chili powder, garlic salt. Let the spices warm up and then add your mash potatoes into the spices until well-combined. Add the green peas and mix. Add the fresh cilantro or coriander leaves and squeeze the lime right at the end and give it another quick stir. Let it cool and refrigerate for at least 30 minutes. Mix the egg in a small bowl. It will be your glue to seal the wonton. Open wonton and scoop out 1/2 TBS of the Indian Curry Potato mixture and fold the wonton into a triangle. Seal the side with the egg and use your fork to seal the edges. Heat vegetable oil in a heavy bottom pan or deep fryer and fry your wonton. This will be very quick since mixture is already cooked. Cook until crispy and golden color and place it on a paper towel to drain out the extra oil. Inspired Sweet Orange Marmalade Chutney: Ingredients: 1/2 cup sweet orange marmalade 1 tsp garam masala 1 tsp cumin 1-2 TBS hot water Mix sweet orange marmalade, garam masala , cumin and hot water until fully combined.
