Hi Guys! Are you looking for a healthier version of lasagna? Well, look no further. This is the perfect recipe to get you started on eating healthier. You won’t miss the traditional pasta lasagna with this rendition of turkey zucchini lasagna. 8 ounces lean ground turkey 2-3 cloves of crushed garlic 1 small onion chopped 1 tsp salt 1/4 tsp red crush pepper 1/8 tsp black pepper 14 ounce low sodium tomato sauce 2 tsp basil seasoning 1/2 tsp onion powder 2 zucchini cut in strips 1/2 cup of low fat cottage cheese 1 cup spinach 8-12 ounces of low fat shredded mozzarella cheese 1.Spray pan with cooking oil and add crushed garlic and onion. Cook on medium heat. Make sure not to burn the garlic. Add crushed red pepper. 2. Add ground turkey and break up the meat as you cook. 3. Season meat with salt, black pepper and basil. 4. Continue to cook the meat until it is fully cooked. 5. Add tomato sauce and stir. Check for seasoning and add more salt or seasoning to your taste. Turn off heat. 5. Cut the zucchini into thin strips length size and cut in half. 6. Pan fry the zucchini. I did not use any oil. Put on parchment paper to cool. 7. Boil spinach and squeeze the water from the spinach, Cut and add to the low fat cottage cheese. Use an 8x12 baking dish and assemble the turkey meat sauce, zucchini and spinach cottage cheese mixture and add mozzarella on top of each layer. Repeat layers until done. Place tin foil on top and place in 375 degrees oven and back for 30 minutes. Last 2-5 minutes, take off foil and and broil the top layer of mozzarella cheese until golden.
